Weekly Menu, Jan 16

The kids are back at school and it felt like we hit the ground running. It was an insanely fast first week back to school. I felt like I could hardly keep up, but we made it. The kids are had a fun break, but were also very happy to go back and see friends and teachers and get back to our “routine” (if you can call it that).

This week is a little nuts with one child off Monday and the other still in school. I am also preparing for my daughters birthday party coming up this weekend and I am trying not to think too much about what needs to be done. I already have a lot put together, so hopefully the last of the details shouldn’t be too hard. The cake is one that I’m actually nervous about. I worry I won’t have time to get it done. I suppose I can always buy one if I can’t make it in time (GASP!!). My biggest concern at this point is weather actually. If we have to keep all the kids inside it’s going to be crazy chaos.

The meals this week are pretty typical menu. I want to try making pizza twists; they look yummy, fun, and easy to sell with the kiddos. I’m pretty sure I’ll be fried by Sunday night and figured it would be a good time to clean out the refrigerator.

The crockpot lasagna is a recipe I’ve tried before and liked but I want to try it in my new, smaller crockpot in hopes it will be a smaller amount without burning. Here’s hoping it works out. Have a yummy week!
