Weekly Menu, Jan 9

Another week with the kids home and we had a blast! Various outings and adventures, and of course of a lot play a relaxation along the way. We’ve all gotten very used to sleeping in, so I have a feeling this week will be a rough one. Starting tomorrow we are back to school…back to early mornings, fast breakfasts, homework, and of course driving all over. It should be interesting.

Last week’s menu went really well. It was a little switched up, but everything happened and was good. I like the idea of zucchini noodles for the stirfry, but I need to use the larger blade and try again. I added chicken, which turned out great! Hoping to improve on that recipe. I also tried using sweet potatoes in my scalloped potatoes recipe. It was a spilt house on this one. My daughter and I thought it was great! My son and hubby weren’t so impressed. I can’t help but wonder if it’s because they are my die-hards when it comes to switching up a recipe. 

In an attempt to keep things moving smoothly, I have a couple classic meals in the menu along with a couple new ones I’ve pinned. The crockpot shells will be handy on Tuesday; I think we’re going to be a bit late that night. And, I get to use my new smaller crockpot. Love my new crockpot! I have also been REALLY craving chinese food, including sushi. Hopefully this new orange chicken recipe I’ve found will hit the spot.

Alright, lets get this week started. I am super excited about it all! The first thing we need to do, of course, is make more room in the fridge. I can handle this. Hope you have some great things planned for tis coming week. Have a yummy week!
