Weekly Menu, Oct 17

Last week was a fun cooking week. I tried the pizza in the crockpot and was pleasantly surprised. It baked the crust evenly and had a nice golden color. It was a little dry, but that was partly my fault. I forgot my crockpot has a "warm" function that basically kept cooking it a little longer that it should have. The other bummer was that it wasn't big enough to feed my family of four so I would have to supplement with something like salads and other fruits and veggies. Overall though, I will totally do this again! It is something that must be done within 2-hours of dinner time, so it basically gives you a little stall time. I started it before leaving for my sons practice and returned to a cooked dinner. Awesome!

My husband was loving the husband-pleasin' meals that we enjoyed at the beginning of the week. It doesn't always work that well for him so we was living it up. He was also super helpful on Saturday when the kids and I were racing home from a day-long workshop and he made three different dinners so we could all eat what we needed that night (you know those days when the kids need comfort food; mom needs to carb-load for an early morning bike ride; and dad needs hearty and filling after a long days work...same ole', same ole').

This week is a little more laid back. I'm sticking with known winners. I am going to try my enchilada casserole in the crockpot Wednesday night to see if we can come home to a cooked meal again. I love when we can do that. I'm also hoping to use the crockpot to make the meat for the taquitos. Keeping that puppy humming.

I'm sure you've noticed how predictable our weekly lunches are. I make lunch for my son and husband each day. They are two peas in a pod when it comes to lunchtime requests. I could make PBJ everyday and they would be happy campers. I try to mix it up a little but if I venture too far from the norm I am reminded what's preferred for lunch. I guess there's some things that just can't be improved. I usually end up eating leftovers to try to keep food moving thru and not wasted. Breakfast is something I'm always trying to improve, but time is so crunched in the morning it can be tough. I'm happy to get something in their tummy's before they're off for the day. Always keeping my eyes open for new ideas though.
