Weekly Post, Dec 26

Well, only a day behind. Not too bad. We had a wonderful, albeit busy Christmas holiday. Everyone has a slew of new toys to play with (including myself, yeah!) and hopefully it will keep the kiddos entertained for a while. We’ll see.

I was marathon baking last weekend. Friday I made a batch of Italian egg bread (we refer to it as Easter bread), a batch of our potato pan rolls, and stuffing for Christmas dinner. On Saturday I made 3 pies and a batch of cinnamon rolls. We are so carbed up it’s ridiculous. I have never been big on New Years Resolutions, but after this carb-fest I might need to re-think that concept.

My husband loves-loves-loves turkey dinner! It is absolutely top of his list! That might be partly related to the fact that I only do it 3 times a year, but never the less, he’s always excited about it. We made a huge turkey for our wee family this year to ensure plenty of leftovers. Soooo, though I have a menu for the week, it’s kind of a “back-up plan” should the kiddos get sick of turkey.

I am excited to try an herb pack in the Crockpot Bob’s Beef to see how it helps the flavor. I am also hoping to finally get some more recipes on here, including the biscuit recipe I’ve been using and the chocolate banana muffin recipe I’m loving right now.

Weekly Menu, Dec 19

We have had a wave of illness sweep thru our house over the last two weeks. I am so hopeful that it’s over, just in time for the holidays. I am wrapping up my preparations and am very thankful that I have a few more days of kids in school so I can get the last of things completed.

Last week was my turn with the cold so it was all I could do to get thru the days. I finished my finals and my hubby picked up the slack on meals. So glad he’s comfortable in the kitchen.  On Sunday we did make the Creamy Chicken Noodle Soup and Focaccia bread, both recipes I found on Pinterest. Both turned out amazing and will definitely be made again! I’m hoping to get a post together for the soup and possibly the bread once I’ve tweeked it to our liking.

This week we need to have a night to clean out the refrigerator. We always have turkey for Christmas; it’s hubby’s fave and I love the leftover turkey sandwiches. I have one Pinterest recipe in there this week, but the rest is classics to keep the week running smooth.

Alright, that’s what we’re aiming for this week. I’m really looking forward to our holiday weekend, and all the food that comes with it. I am ready to get to work on everything I can do ahead of time, so I suspect I’ll be pretty busy in the kitchen this week. My kids might earn a bonus with all the dishes they’ll need to help me with. Have a yummy week!
