We are already a
month into our summer break and it has been crazy! Every day we have had
something going on. It feels as if we are busier now than when kids were in
school. I confess, there are so many
wonderful summer activities for kids, it’s hard not to take advantage. We’ve been going to summer movies, local
library workshops, and local shop activities. Not to mention swimming every
day; necessary in this heat.
We also finished up baseball just in time to start swim
team, and my daughter is trying her hand at gymnastics this summer. All
wonderful things, but they all keep us very busy. That’s a lot of stuff to also
fit food into.
My menu’s lately have, quite frankly, been boring and
uninspiring. Trying to eat on the run
(literally eating sack lunches for dinner on Wednesday night between
activities) and cater all the different tastes and eating styles can wear a
girl down. We have been talking a lot lately about appreciating the food in
front of you for what it is, rather than wishing for some perfect dish. I
realize kids taste buds can be more sensitive to bold flavors, but I am trying
to reel some of that in a bit.

I am excited to try the turkey breast on Friday. I would
like to roast my meat on the weekends and then use that meat throughout the week
