Weekly Menu, April 17

It has been crazy around here. I keep waiting for it to calm down, but I'm sure that's just wishful thinking. It feels like someone has been sick here all year, or at least since October. It's never the same thing, or the same person, but our schedule keeps getting mixed up.  I am also still learning about all the activities that come with a school-age child. Spring carnivals and special peoples days, field trips and class parties. Stuff is always going on, which is a lot of fun, but can be super tiring to keep up with. I hope I get better at all this.

I'm not complaining, I promise. We are having so much fun with school and all the awesome learning and exploring that comes with it. I'm just trying to get the hang of it all. Last week, the menu went alright, but I definitely had to make adjustments along the way. I don't make lasagna often, and I wasn't happy with the recipe I tried this time.

Also, I didn't get to make stew meat with scalloped potatoes. It's one of my hubby's fave meals and he was down for the count with something so we postponed it for this week. Yeah for mac'n'cheese and homemade fish sticks! I also found a new biscuit recipe I'm pretty happy with. I'm hoping to get that posted here soon.

Weekly Menu 4-10

I was hoping to finish a quilt this week; I have one that is soooo close. Unfortunately I'm still trying to catch up around the house from having spring breaks. Maybe this week? I'm hopin'!! Until then, I have gotten the menu put together for next week.

I did not do a very good job at sticking to the menu last week, but I did have alternates other than eating out so I guess that's a win. Unexpected things popped up and my sister was visiting, which made me alter some of my choices. I have also been exhausted the last few days (really hoping I'm not getting sick; yuck) so I have been trying to rest a bit.

I did try the zucchini muffins I was interested in, but I was disappointed. They were way too sugary! I will need to keep working on that, and I got another idea in the meantime...sweet potato. I will play with those a bit and see what I can come up with.

Meanwhile, here's this week's menu. There are some repeats like the frozen pasta and the teriyaki skewers. I still want to try those things and they didn't make it last week.

Weekly Menu, April 3

Last week went pretty well. I really wanted to try the zucchini muffins, but time got away from me and I didn't do it. I am hoping this week they'll make it. We'll see. It looks like this week is shaping up to be a lot like last week, so I'm going to try.

I am throwing another experiment in there. Teriyaki beef skewers from pinterest. They look interesting. The more I do grilling stuff, the more I think I need a gas grill. We have charcoal, and I am never motivated to warm it up so I end up cooking on the kitchen griddle. That would be all good except that it makes a huge mess! It's no fun to clean up. Maybe this is the summer it will happen...we'll see.

Tuesday is no longer our late night, so I am going to take a break from the crockpot this week. I definitely plan to use it again in the near future. Hope I give you some inspiration for the week. Here's to it!
