Weekly Menu, March 20

Oops! I'm a day late! I had so much fun last week with my son for spring break I lost track of time and have been scrambling with a menu. So glad I finally got it finished. I can get back on track now with our food.

We had a good time though. We went on a couple short hikes in the area that I haven’t done in a long time – think, before he was born – and it was fun to see how well he handled it and how much he enjoyed it.  He and I got to do our “science” thing that we like and really take our time looking at things. It helps that spring came early for us so everything is in full bloom, the birds are chirping, and critters are on the move. Gives us lots to see.

We have a super busy week this week, which will be end-capped with his opening baseball game. I am trying to keep the menu easy and portable for the days we might be too busy to sit at the table. I am also sticking to the basics, although I have been playing with some pasta salads for lunch in hopes they might be well-received as something different and yummy.

There are a couple pins in there, including the hobo dinner.  I am excited to see how that goes. Otherwise, we will be enjoy the usual yumminess.  Enjoy the week!

Weekly Menu, March 13

We have reached the first of 2 spring breaks in our house. My son is home with me this week, and we had big plans…until this morning when he woke up feeling sick. We’ll see how the week goes now. Good news is that I get to play at home now so I’m hoping to do some experimenting in breakfast and lunch items. He can be my test subject.

Last week I tried out a couple new dinners and one was an immediate hit! I will absolutely be making the Alfredo stuffed shells again, but I think I need to add more cheese to the shells. We’ll see what I can play with. I also made cupcakes for my Mom’s birthday. They turned out A.M.A.Z.I.N.G. because of the new frosting recipe I’ve been experimenting with. I really need to get that recipe on here. I’ve used it as a layer cake filling and as a cupcake topping at it’s been amazing both times.

The other experimenting I’ve done is with lunches. My daughter will be starting kindergarten next year (what?!?) and she’s not a typical lunch eater. Sandwiches are out of the question, and peanut butter on anything is unacceptable. The boys in the house have been kind the last couple of years that I’ve made lunches for them. She’s definitely more challenging. That’s okay; it gives me a chance to try some different things.

So, a good mix of classics and newbies in the menu. We’re still trying to figure out baseball practice at meal time so I’m trying some food-on-the-go kind of meals. Lets see how that goes. I might also try making some fun dessert in green for St. Patricks Day on Friday. We’ll see. Have a yummy week. Enjoy!
