Weekly Menu, Oct 9

Last week went pretty well. There were a couple changes made on the fly as schedules changed, but we were able to stick to the plan pretty well. I made one big change, tonight we had spaghetti and meatballs, which turned out awesome. I was able to make another 5 meals that are going in the freezer along with 6 jars of sauce which will keep our other pasta dishes going for a while. Totally worth it!

This morning we had a bazillion bananas that were ripe and needed to be in bread immediately! I managed to crank out a giant batch of banana walnut mini muffins and then made an amazing batch of chocolate banana mini muffins. These little guys are melt-in-your-mouth amazing! I am going to try to get the recipe up this week; they are so good! I think I could have eaten the whole batch myself...my kids discovered me and I had to share. Man!

This week I am trying a couple new things. I'm hoping to modify the crockpot pizza a little to make it with homemade ingredients. I'm really excited about it. My son is on break for the week, so I'm going to have a helper. We'll see if I'm too ambitious, but I think we can do it.
