Weekly Menu, July 17

We have been having such a wonderful, and super busy summer I haven’t been able to meal plan at all.  I admit, it’s driving this OCD-detail oriented gal a little crazy! We have had a lot of nights of sandwiches, mac n cheese, and take out on the way home. Sometimes it’s just what you have to do. I am ready to get back on track though. It’s time to get some meals on the table again.

One other thing that was slowing me down was a growing frustration with the various tastebuds I am working with. I have had to change my thinking and remind myself (and my children) that you don’t have to love every meal. Sometimes it’s okay to just like a meal, or be okay with eating something that’s not your favorite but it’s still better than nothing. I try super hard to pick recipes that are within our tastes and interests, but as every homecook knows, sometimes it’s a miss.  I feel it’s important my kids understand this important message.

That being said, I have tried to include some family favorites in our menu this week. I also have a chicken dinner from pinterest that I’m interested to try.

The manicotti should help me use up the homemade sauce I have left. We are out of meatballs so I need to finish up the sauce so I can make some more. Ohh, so tough….
