Weekly Post, April 24

Last week was a week of ups and downs.  The girl had spring break and we had grand plans to explore…then Mom got sick and the weather turned hot and all of a sudden staying home sounded way better, except to the girl.  We did manage to have a few adventures, including hikes and water play.

We also went to the local fair that’s in town. Way too much fun there! I love all the food.  Corn dogs, fry bread, chicken legs, curly fries, cotton candy and ice cream. Oh my goodness it’s all so wonderful. Of course, the kiddos enjoyed the rides the most and had a blast.

Most of our meals for the week went well, but I found out that my son is tired of mac n cheese (I thought the day would never come!). I also tried a steak bites recipe that was not well received by the family. I even tried to make it more like kabobs but the marinade was too different from the usual flavors we stick close to and they couldn’t handle it. Oh well, with pinterest you win some and you loose some.

This week I have a few new recipes I want to try. I’m still fighting off some sort of cold---AGAIN--- so we’ll see how energetic I am. We only have one game this week, so hopefully we can have a calmer week for some much needed rest.

I’m really excited to try the pizza pinwheels. It would be a great lunch meal if I can get it work. I’m still on the hunt for lunchtime meals for the girl next year. This summer I’m hoping to have a lot of practice as well.  Alright, here we go! Have a yummy week!

Weekly Menu, April 17

Wait, what week is it? Am I really a week behind? Man alive, last week was a blur, and I worry this week will be just as blurry. We only have a couple calm nights mixed among a bunch of craziness. The county fair is here and who can resist a trip to see the animals and enjoy the rides. We also have baseball galore, and our anniversary (almost a month late) will finally be celebrated...maybe.  After the last few weeks a little break sounds super nice.

Last week we did pretty well sticking to things. I tried some new things for Easter dinner this year. We have always done turkey for every holiday meal. That's all good, but I lost track of time and forgot to make my potato pan rolls so I tried a new bread roll recipe that was a bit faster. They are good, but almost seem better for sandwiches rather than side rolls. I'll be trying them again for sure.

I also ran out of time to make pies (mainly because they need to chill) and my husband suggested it might be nice to try carrot cake. My mom had a killer recipe from our close family friend that I've been wanting to try. I don't know why I haven't tried before! It was AMAZING! So moist and rich and of course creamy frosting with a little tang from cream cheese and sour cream.

It was originally a sheet cake but I wanted a layer cake so I made some modifications. I also modified the frosting a bit so it would cover more. We will totally be having this again. In the mean time, we have a new meal plan for this week that's a little nuts.  I'm really hoping I can stick to it, but it will be pretty rocky, mainly for dinner.

Weekly Menu, March 27

I don’t know about you, but March was pretty much a blur. I’m not sure if I blinked and missed it but we are heading into April full force. Baseball has been going well and keeping us super busy. That’s probably where all of our time has gone. Trying to juggle that with karate to keep them both up has been interesting. I am really working hard to figure out how we eat on the go. We’ve had some successes and some failures. And a couple calls to hubby asking him to pick something up on his way to meet us. 

I am committed to providing yummy meals though. I really don’t want to fall into a fast food comfort zone. I like that my kiddos are not huge fans of fast food. I am not either, mainly because I hate paying for it, but I really try to avoid it if I can.  It’s just a matter of playing around and being prepared.  I can do this.

So last week went pretty well. By Friday’s game I’d realized I needed to serve “dinner” at 3:30pm when we got home from school and then have snacks after the game. It seems to work better if he has fuel before the game and just a little for the night afterwards. We’ll try that again this week and see how it works. We’ve also been juggling a lot of after school doctors appointments, which cuts into food prep time. Again, planning ahead and prepping what I can makes a huge difference.

You see it in this weeks menu.  We’re trying chicken salad roll ups this week, and then a couple of meals I’ve been experimenting with including crockpot lasagna and turkey sliders with curly fries.
